Maple Dijon Mustard Roasted Brussel Sprouts And Carrots

INGREDIENTS:

  • 1lb carrots
  • 1/2 lb brussel sprouts
  • maple syrup
  • 3 cloves garlic, minced
  • dijon mustard

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Toss the brussels sprouts in the oil along with the salt and pepper.
  3. Arrange the brussels sprouts in a single layer on a baking sheet.
  4. Roast in a preheated 400F/200C oven until they start to caramelize, flipping them once in between, about 30 minutes.
  5. Mix the oil, vinegar, maple syrup, mustards, garlic, salt and pepper in a small bowl.Toss the brussels sprouts and almonds in the maple dijon vinaigrette.
