INGREDIENTS:
- 1lb carrots
- 1/2 lb brussel sprouts
- maple syrup
- 3 cloves garlic, minced
- dijon mustard
INSTRUCTIONS:
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
- Toss the brussels sprouts in the oil along with the salt and pepper.
- Arrange the brussels sprouts in a single layer on a baking sheet.
- Roast in a preheated 400F/200C oven until they start to caramelize, flipping them once in between, about 30 minutes.
- Mix the oil, vinegar, maple syrup, mustards, garlic, salt and pepper in a small bowl.Toss the brussels sprouts and almonds in the maple dijon vinaigrette.
