Fish in Parchment Paper
1. Preheat oven to 375 degrees.
2. Toss together parsley, red onion, zucchini, yellow squash, tomato.
3. Add salt and pepper to taste.
4. Place each halibut filet on a piece of parchment paper and top with vegetable mixture.
5. Place 1 tablespoon of butter on top of each.
6. Fold halibut in parchment paper and roll edges to seal. Place on a sheet pan and cook for 20 to 25 minutes.
7. You can replace halibut with other fish of your choice.
